About Us

We’re a small, family-run bakery in southern Colorado, focused on rustic sourdough baked goods made with an uncompromising commitment to ingredient quality. Everything we bake begins with real sourdough and simple, carefully chosen ingredients selected for flavor, nourishment, and substance. Whenever possible, we prioritize organic and natural ingredients sourced locally. We bake with intention and care, respecting both the ingredients and the process. Our goal isn’t mass production, but doing things properly—from thoughtful sourcing to careful, deliberate baking.

Why Sourdough

We use sourdough because it produces better baked goods in every meaningful way. Natural fermentation develops deeper, more complex flavor, improves structure and texture, and supports better digestibility than products made with commercial yeast. Sourdough works slowly, allowing the grain to ferment as it was meant to. This process requires patience, attention, and consistency, but the results are worth it. We choose sourdough because it elevates both the quality of the food and the experience of eating it.

Ingredients That Matter

Our ingredient choices are intentional and never incidental. We use organic flours whenever they’re available locally, along with grass-fed butter, local raw honey, and mineral-rich Himalayan pink salt instead of refined table salt. We avoid unnecessary additives and shortcuts, selecting ingredients for their flavor, nutritional value, and integrity. These decisions directly shape the taste, texture, and overall eating experience of what we bake and define the standard we hold across every product.

How We Bake

As a home-based cottage bakery, we bake on a scheduled basis rather than daily. Before each bake, our kitchen is thoroughly cleaned and prepared, meeting the standards required for safe and careful food production. We bake once a week, working in small batches and following a deliberate process that allows proper fermentation, shaping, and baking for each item. This rhythm ensures consistency, cleanliness, and the level of care we believe good food requires.

Ordering & Availability

Because of our cottage bakery schedule, orders are placed in advance and baked fresh for a specific pickup or shipping date. Occasionally, you may find a small selection of items available at local bake sales or at our office, but pre-ordered baking is our standard practice.

We offer local pickup in Blanca, Colorado, and ship anywhere within Colorado using priority shipping to ensure freshness.

Our goods are produced in a home kitchen that is not subject to state inspection. Bethlehem Bakehouse holds a current food handler’s certificate as required under Colorado Cottage Food Law.
